Ingredients

- 1 teaspoon olive oil
- 1 pound lean ground beef
- 1.25 ounce taco seasoning
- 1/4 teaspoon pepper
- 1 10 ounce can diced tomatoes with green chilis
- 1 15 ounce can Ranch Style beans
- 6 1 ounce packages corn chips
- Shredded cheese
- Sour cream
- Sliced green onions, for serving
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the ground beef and cook for 6–8 minutes or until no longer pink, breaking it into crumbles. Drain if necessary.
- Stir in the taco seasoning mix, pepper, diced tomatoes, and beans.
- Bring the mixture to a boil; simmer uncovered for 20 minutes or until it thickens, stirring occasionally.
- Open the corn chip bags just before serving. Add the beef mixture and desired toppings. Serve immediately.
Notes
Walking tacos can be served directly in the corn chip bags. Consider using different chips for a unique taste.
