Description

Ingredients

  • 2 cups fresh strawberries, sliced
  • 1/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Whipped cream for serving

Instructions

  1. Combine sliced strawberries and sugar in a bowl. Let them sit for about 30 minutes to release their juices.
  2. Preheat your oven to 425°F (220°C).
  3. Mix flour, baking powder, and salt in another bowl. Cut in butter until the mixture resembles coarse crumbs.
  4. Add heavy cream and vanilla extract, mixing until just combined.
  5. Turn the dough onto a floured surface and knead gently. Pat into a 1-inch thick round and cut out shortcakes.
  6. Place the shortcakes on a baking sheet and bake for about 12-15 minutes until golden.
  7. Let shortcakes cool slightly, then split them in half.
  8. Spoon the macerated strawberries onto the bottom half, add whipped cream, then top with the other half. Serve immediately.

Notes

Store leftover components separately. Shortcakes can be kept at room temperature for up to two days.
