A delicious copycat recipe for Texas Roadhouse Salmon, featuring a sweet brown-sugar glaze and a technique that ensures moist and flaky fish.

- 4 salmon fillets (skin-on, 170 g / 6 oz each)
- 1 tsp (5 g) kosher salt
- ½ tsp (1 g) black pepper, freshly ground
- 1 tbsp (15 ml) olive oil
- 2 tbsp (28 g) unsalted butter
- 2 tbsp (30 g) light brown sugar, packed
- 1 tbsp (15 ml) Dijon mustard
- 1 tbsp (15 ml) lemon juice
- ¼ tsp (1 g) garlic powder
- ½ tsp (1 g) paprika
- Optional: chopped fresh parsley or chives for garnish
Instructions
- Pat the salmon fillets dry with paper towels and season with salt and pepper. Let sit at room temperature for 5 minutes.
- Heat a heavy skillet over medium-high heat for about 2 minutes until hot.
- Melt the butter in a small saucepan and stir in brown sugar, mustard, lemon juice, garlic powder, and paprika. Warm to dissolve sugar.
- Add olive oil to the skillet and place the salmon skin-side down; sear for 4–5 minutes without moving.
- Flip the salmon and brush with half the glaze. Transfer to a 200°C (400°F) oven for 3–4 minutes or under the broiler for 1–2 minutes until caramelized.
- Remove from the oven, brush with remaining glaze, and let rest for 3–5 minutes before serving.
Notes
For best results, ensure the fillets are not overcrowded in the pan for even cooking. The glaze can be made in advance and stored in the refrigerator.
