Description

A delightful fusion of tart lemon and sweet blueberries in a creamy cheesecake bar, perfect for warm summer days.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons sugar
  • 4 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • ½ cup fresh lemon juice
  • 2 cups fresh blueberries

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 baking dish.
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of the prepared dish.
  3. In a large mixing bowl, beat cream cheese until smooth. Gradually add sugar and vanilla extract, mixing until fully incorporated.
  4. Add eggs one at a time, mixing well after each addition.
  5. Mix in sour cream and lemon juice until combined.
  6. Gently fold in blueberries with a rubber spatula.
  7. Pour the cheesecake filling over the crust and smooth the top.
  8. Bake for 40-45 minutes or until the center is set but slightly jiggles.
  9. Allow cooling in the pan for about 10 minutes, then refrigerate for at least 4 hours before slicing into bars.

Notes

For best results, let the bars chill for at least 4 hours to set properly.
