- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons sugar
- 4 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- ½ cup fresh lemon juice
- 2 cups fresh blueberries
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 baking dish.
- In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of the prepared dish.
- In a large mixing bowl, beat cream cheese until smooth. Gradually add sugar and vanilla extract, mixing until fully incorporated.
- Add eggs one at a time, mixing well after each addition.
- Mix in sour cream and lemon juice until combined.
- Gently fold in blueberries with a rubber spatula.
- Pour the cheesecake filling over the crust and smooth the top.
- Bake for 40-45 minutes or until the center is set but slightly jiggles.
- Allow cooling in the pan for about 10 minutes, then refrigerate for at least 4 hours before slicing into bars.
Notes
For best results, let the bars chill for at least 4 hours to set properly.
