Ingredients

- 8 to 10 Eggs
- 1 cup Cottage cheese
- Salt and pepper to taste
- Mix ins (chopped spinach, diced bell pepper, cooked turkey bacon, shredded cheese)
- Oil spray or muffin liners
Instructions
- Blend the eggs and cottage cheese until smooth.
- Stir in your desired mix ins.
- Pour into a greased muffin tin.
- Bake at 350°F for 18 to 22 minutes until set.
- Cool completely before storing.
Notes
Store in a sealed container in the fridge for up to 4 days. Reheat in the microwave for 20 to 30 seconds or in a toaster oven for a few minutes.
