Description
The ultimate comfort food, this Beef Stroganoff is quick to prepare and incredibly rich and creamy, perfect for weeknight dinners or special occasions.
Ingredients

- 1 tbsp olive oil
- 1 large onion, chopped
- 800g beef sirloin steak, cut into 2cm pieces
- 2 tbsp plain flour
- 200ml dry sherry
- 500ml beef stock
- 150g chestnut mushrooms, quartered
- 1 tbsp tomato puree
- 150ml double cream
- 2 tbsp Dijon mustard
- Salt and freshly ground black pepper
- Fresh parsley, chopped (for garnish)
- Pappardelle pasta (to serve)
Instructions
- Season the beef with salt and pepper, brown in oil, then remove.
- Cook onions in the same pan, then add flour and stir.
- Gradually add sherry, then stock, returning beef and mushrooms to the pan.
- Allow to simmer for 20 minutes, then stir in cream and mustard.
- Serve over cooked pappardelle and garnish with parsley.
