Description

The ultimate comfort food, this Beef Stroganoff is quick to prepare and incredibly rich and creamy, perfect for weeknight dinners or special occasions.


Ingredients

Scale
  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 800g beef sirloin steak, cut into 2cm pieces
  • 2 tbsp plain flour
  • 200ml dry sherry
  • 500ml beef stock
  • 150g chestnut mushrooms, quartered
  • 1 tbsp tomato puree
  • 150ml double cream
  • 2 tbsp Dijon mustard
  • Salt and freshly ground black pepper
  • Fresh parsley, chopped (for garnish)
  • Pappardelle pasta (to serve)

Instructions

  1. Season the beef with salt and pepper, brown in oil, then remove.
  2. Cook onions in the same pan, then add flour and stir.
  3. Gradually add sherry, then stock, returning beef and mushrooms to the pan.
  4. Allow to simmer for 20 minutes, then stir in cream and mustard.
  5. Serve over cooked pappardelle and garnish with parsley.
