  • 150 g (3/4 cup) granulated sugar
  • 50 g (1/4 cup, packed) brown sugar
  • 2 large eggs
  • 115 g (1/2 cup) unsalted butter, melted
  • 120 g (1/2 cup) sour cream or full-fat Greek yogurt
  • 30 g (1/4 cup) unsweetened cocoa powder
  • 70 g (2.5 oz) melted dark chocolate
  • 250 g (2 cups) all-purpose flour
  • 1 tsp (5 g) baking soda
  • 1/2 tsp (2 g) baking powder
  • 1 tsp kosher salt
  • 120 g (3/4 cup) chocolate chips
  • 1 tsp (5 ml) vanilla extract
  • 1/2 tsp espresso powder (optional)

Instructions

  1. Preheat the oven to 175°C (350°F). Line a 9 x 5-inch loaf pan with parchment paper.
  2. Mash the bananas in a medium bowl until mostly smooth. Whisk in the eggs, melted butter, sour cream, vanilla, granulated sugar, and brown sugar until combined.
  3. Combine the flour, cocoa powder, baking soda, baking powder, and salt in a large bowl. Add espresso powder if using.
  4. Melt the dark chocolate in the microwave or double boiler, then whisk into the banana mixture until smooth.
  5. Fold the wet ingredients into the dry ingredients gently until just combined.
  6. Toss the chocolate chips with a bit of flour to prevent sinking, then fold them into the batter.
  7. Bake in the preheated oven for 55 to 65 minutes, checking for doneness with a toothpick.
  8. Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.

Notes

Use heavily speckled bananas for the best flavor. Allow batter to rest for 10 minutes before baking to improve texture.
