- 400 g (about 3 medium) ripe bananas
- 150 g (3/4 cup) granulated sugar
- 50 g (1/4 cup, packed) brown sugar
- 2 large eggs
- 115 g (1/2 cup) unsalted butter, melted
- 120 g (1/2 cup) sour cream or full-fat Greek yogurt
- 30 g (1/4 cup) unsweetened cocoa powder
- 70 g (2.5 oz) melted dark chocolate
- 250 g (2 cups) all-purpose flour
- 1 tsp (5 g) baking soda
- 1/2 tsp (2 g) baking powder
- 1 tsp kosher salt
- 120 g (3/4 cup) chocolate chips
- 1 tsp (5 ml) vanilla extract
- 1/2 tsp espresso powder (optional)
Instructions
- Preheat the oven to 175°C (350°F). Line a 9 x 5-inch loaf pan with parchment paper.
- Mash the bananas in a medium bowl until mostly smooth. Whisk in the eggs, melted butter, sour cream, vanilla, granulated sugar, and brown sugar until combined.
- Combine the flour, cocoa powder, baking soda, baking powder, and salt in a large bowl. Add espresso powder if using.
- Melt the dark chocolate in the microwave or double boiler, then whisk into the banana mixture until smooth.
- Fold the wet ingredients into the dry ingredients gently until just combined.
- Toss the chocolate chips with a bit of flour to prevent sinking, then fold them into the batter.
- Bake in the preheated oven for 55 to 65 minutes, checking for doneness with a toothpick.
- Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
Notes
Use heavily speckled bananas for the best flavor. Allow batter to rest for 10 minutes before baking to improve texture.
