Description

A quick and easy recipe for Thai Peanut Chicken Noodle Bowls that combines creamy peanut butter with tender chicken and fresh veggies.


Ingredients

  • 200g rice noodles
  • 1 cup cooked chicken, shredded (or tofu for a vegetarian version)
  • 1/2 cup bell pepper, sliced
  • 1/2 cup carrots, julienned
  • 1/4 cup green onions, sliced
  • 1/2 cup cilantro, chopped
  • 1/4 cup peanuts, crushed
  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 1 tablespoon lime juice
  • 1 teaspoon chili sauce (optional)

Instructions

  1. Prep Your Ingredients: Thinly slice the bell pepper, julienne the carrots, and chop the green onions and cilantro.
  2. Cook the Rice Noodles: Boil water in a large pot, add rice noodles, and cook according to package instructions (5-7 minutes). Drain and rinse under cold water.
  3. Make the Peanut Sauce: In a mixing bowl, combine peanut butter, soy sauce, honey, minced garlic, lime juice, and chili sauce. Whisk until smooth.
  4. Combine Everything: Toss cooked noodles, shredded chicken, bell pepper, carrots, and green onions in a large bowl. Pour peanut sauce over and gently toss.
  5. Serve and Garnish: Dish the noodles into bowls and top with cilantro and crushed peanuts. Add a squeeze of lime juice if desired.

Notes
