- 200g rice noodles
- 1 cup cooked chicken, shredded (or tofu for a vegetarian version)
- 1/2 cup bell pepper, sliced
- 1/2 cup carrots, julienned
- 1/4 cup green onions, sliced
- 1/2 cup cilantro, chopped
- 1/4 cup peanuts, crushed
- 1/2 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 clove garlic, minced
- 1 tablespoon lime juice
- 1 teaspoon chili sauce (optional)
Instructions
- Prep Your Ingredients: Thinly slice the bell pepper, julienne the carrots, and chop the green onions and cilantro.
- Cook the Rice Noodles: Boil water in a large pot, add rice noodles, and cook according to package instructions (5-7 minutes). Drain and rinse under cold water.
- Make the Peanut Sauce: In a mixing bowl, combine peanut butter, soy sauce, honey, minced garlic, lime juice, and chili sauce. Whisk until smooth.
- Combine Everything: Toss cooked noodles, shredded chicken, bell pepper, carrots, and green onions in a large bowl. Pour peanut sauce over and gently toss.
- Serve and Garnish: Dish the noodles into bowls and top with cilantro and crushed peanuts. Add a squeeze of lime juice if desired.
Notes
This recipe is easily customizable. Substitute chicken for tofu for a vegan option, or adjust vegetables based on preference.
