- 500 g (1 lb) ground beef
- 30 ml (2 tbsp) soy sauce
- 15 ml (1 tbsp) sesame oil
- 1 tbsp gochugaru
- 3 cloves garlic, minced
- 1 tsp ginger, minced
- 1 cucumber, thinly sliced
- 1 tbsp rice vinegar
- 1 tsp sugar
- Sesame seeds, for garnish
Instructions
- Prepare the Cucumber Salad: In a mixing bowl, combine the sliced cucumber, rice vinegar, sugar, and a pinch of salt. Toss gently and set aside for about 10 minutes to marinate.
- Cook the Ground Beef: In a large skillet, heat 30 ml (2 tbsp) of sesame oil over medium-high heat. Add the ground beef, breaking it up with a spatula. Cook for about 5-6 minutes, until browned and no longer pink.
- Add Aromatics and Seasoning: To the skillet, add the minced garlic, ginger, soy sauce, and gochugaru. Stir well and cook for another 3 minutes, until fragrant and combined.
- Assemble and Serve: Remove the skillet from heat. Serve the spicy ground beef over cooked rice or in lettuce wraps. Top with the cucumber salad and garnish with sesame seeds.
Notes
Avoid overcooking the beef to keep it juicy. Salting the cucumbers beforehand prevents them from getting soggy.
