A comforting and quick meal combining beef stroganoff flavors with tortellini for a delicious family dish.
Ingredients

- 8 oz. cheese tortellini
- 1 lb. beef sirloin or ground beef, sliced thinly
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 cup sour cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot of salted boiling water, cook the tortellini according to package directions. Drain and set aside, saving some pasta water.
- In a large skillet, heat the olive oil over medium-high heat. Add the beef, season with salt and pepper, and cook until browned (about 5 minutes).
- Add the diced onion and minced garlic, stirring until the onions are translucent (about 3-4 minutes).
- Pour in the beef broth and bring to a gentle simmer. Cook for about 5 minutes.
- Lower the heat, add the sour cream, and mix until creamy. Adjust the consistency with reserved pasta water if needed.
- Gently fold in the cooked tortellini and heat through for a couple of minutes.
- Garnish with chopped parsley and serve hot.
Notes
Don’t skip on seasoning and feel free to substitute meat for chicken or vegetables for a vegetarian option.
