Description

A comforting and quick meal combining beef stroganoff flavors with tortellini for a delicious family dish.


Ingredients

  • 8 oz. cheese tortellini
  • 1 lb. beef sirloin or ground beef, sliced thinly
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup sour cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot of salted boiling water, cook the tortellini according to package directions. Drain and set aside, saving some pasta water.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the beef, season with salt and pepper, and cook until browned (about 5 minutes).
  3. Add the diced onion and minced garlic, stirring until the onions are translucent (about 3-4 minutes).
  4. Pour in the beef broth and bring to a gentle simmer. Cook for about 5 minutes.
  5. Lower the heat, add the sour cream, and mix until creamy. Adjust the consistency with reserved pasta water if needed.
  6. Gently fold in the cooked tortellini and heat through for a couple of minutes.
  7. Garnish with chopped parsley and serve hot.

Notes

Don’t skip on seasoning and feel free to substitute meat for chicken or vegetables for a vegetarian option.
