Description

A fresh and vibrant creamy pasta salad, perfect for gatherings or meal prep, bursting with flavors from fresh vegetables and a tangy dressing.


Ingredients

  • 250 g (9 oz) rotini or fusilli pasta
  • 200 g (2 cups) chopped bell peppers
  • 150 g (1 cup) halved cherry tomatoes
  • 30 g (1/4 cup) fresh parsley or basil
  • 120 ml (1/2 cup) mayonnaise
  • 60 ml (1/4 cup) Greek yogurt
  • 1 tablespoon lemon juice
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente, about 8–10 minutes. Drain and rinse under cold water to stop cooking.
  2. Prepare the vegetables by chopping bell peppers and halving cherry tomatoes. Set aside.
  3. Make the dressing in a mixing bowl by whisking together mayonnaise, Greek yogurt, lemon juice, salt, and pepper until creamy.
  4. Combine the cooled pasta, vegetables, and dressing in a large bowl. Mix gently using a spatula.
  5. Chill in the refrigerator for at least 30 minutes to let the flavors meld before serving.

Notes
