Maple Mustard Roasted Carrots and Apples – A Cozy Winter Side Dish

- 4 medium carrots, peeled and cut into 1-inch pieces
- 2 large apples, peeled, cored, and cut into 1-inch pieces
- 3 tablespoons olive oil
- 2 tablespoons pure maple syrup
- 1 tablespoon Dijon mustard
- 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
- Salt and pepper to taste
- Optional garnish: Fresh parsley or extra thyme for serving
Instructions
- Preheat your oven to 400°F (200°C).
- Peel the carrots and cut them into 1-inch pieces. Peel, core, and chop the apples into 1-inch pieces.
- In a small bowl, whisk together the olive oil, maple syrup, Dijon mustard, and thyme. Add salt and pepper to taste.
- In a large mixing bowl, add the chopped carrots and apples. Pour the maple mustard dressing over and toss to coat.
- Transfer the carrots and apples to a roasting pan or baking sheet in a single layer. Roast for 25-30 minutes, tossing halfway through.
- Remove from the oven and transfer to a serving dish. Garnish with fresh parsley or additional thyme.
