- 2 tbsp butter, melted and cooled
- 1 large egg
- 3/4 cup light brown sugar
- 1/4 cup granulated sugar
- 1/2 cup vegetable oil
- 2 tbsp milk
- 1/2 tsp vanilla extract
- 3/4 cup pumpkin puree
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/2 tsp pumpkin pie spice
- Pinch of nutmeg
- For the Coating: 1/4 cup melted butter, 1/4 cup granulated sugar, 2-3 tbsp ground cinnamon
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, beat the egg until fluffy. Add oil and sugars; combine well.
- Mix in butter, milk, vanilla, and pumpkin.
- Combine dry ingredients and sift; then mix into wet ingredients.
- Fill greased donut pan and bake for 10 min or until cooked through.
- Cool, then coat in butter and cinnamon-sugar.
Notes
For a healthier option, substitute butter with coconut oil and use almond milk for a dairy-free version. Adjust spices according to personal preference for more flavor.
