Description

A quick and easy recipe for fluffy and delicious pumpkin donuts, perfect for fall and any time sweet treats are desired.


Ingredients

  • 2 tbsp butter, melted and cooled
  • 1 large egg
  • 3/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 tbsp milk
  • 1/2 tsp vanilla extract
  • 3/4 cup pumpkin puree
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 tsp pumpkin pie spice
  • Pinch of nutmeg
  • For the Coating: 1/4 cup melted butter, 1/4 cup granulated sugar, 2-3 tbsp ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, beat the egg until fluffy. Add oil and sugars; combine well.
  3. Mix in butter, milk, vanilla, and pumpkin.
  4. Combine dry ingredients and sift; then mix into wet ingredients.
  5. Fill greased donut pan and bake for 10 min or until cooked through.
  6. Cool, then coat in butter and cinnamon-sugar.

Notes

For a healthier option, substitute butter with coconut oil and use almond milk for a dairy-free version. Adjust spices according to personal preference for more flavor.
