Ingredients
Scale
- 900 g (2 lbs) thinly sliced ribeye or top round
- 1 large yellow onion, thinly sliced (about 200 g / 7 oz)
- 1 green bell pepper, thinly sliced (about 120 g / 4 oz)
- 30 ml (2 tbsp) neutral oil
- 28 g (2 tbsp) unsalted butter
- 12 soft dinner rolls or Hawaiian rolls
- 170 g (6 oz) provolone or American cheese, sliced
- 30–60 ml (2–4 tbsp) low-sodium beef broth
- 5 g (1 tsp) kosher salt
- 3 g (½ tsp) freshly ground black pepper
- Optional: 10 ml (2 tsp) Worcestershire sauce
- Optional garnish: chopped parsley or pickled jalapeños
Instructions
- Prep the meat and veg: Pat sliced beef dry and season with salt and pepper. Slice the onion and pepper thinly.
- Brown the onions and peppers: Heat oil in a skillet, add onions and peppers, cook until soft and browned, about 8–10 minutes.
- Sear the beef in batches: Increase heat, add more oil, and sear beef until browned, about 1–2 minutes per side.
- Deglaze and combine: Add all ingredients back to the skillet with beef broth and Worcestershire sauce, and stir to lift browned bits.
- Prepare the rolls: Preheat the oven, split rolls, and brush with melted butter.
- Assemble and melt the cheese: Divide beef mixture over the rolls and top with cheese, then bake and broil until melted.
- Serve: Let sliders rest and serve warm with optional garnishes.
Notes
For best texture, avoid overcrowding the pan when searing beef. You can make the filling ahead of time and reheat before serving.
