Instructions
- In a large mixing bowl, combine 1 cup of flour, 2 tablespoons of sugar, 2 teaspoons of baking powder, and a pinch of salt.
- In a separate bowl, whisk together 1 cup of milk, 1 large egg, and 2 tablespoons of melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined; it’s okay if there are a few lumps.
- If you’re using any mix-ins like chocolate chips or berries, fold them into the batter gently.
- Preheat a non-stick skillet or a mini muffin pan over medium heat. If using a skillet, lightly grease it with butter or cooking spray.
- For skillet pancakes, pour small dollops of batter (about 2 tablespoons each) onto the skillet. Cook for about 2-3 minutes until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
- If using a mini muffin pan, fill each cup about 2/3 full with batter and bake at 350°F (175°C) for 10-12 minutes or until a toothpick comes out clean.
- Once cooked, remove the Pancake Poppers from the pan and serve immediately with your favorite toppings, such as maple syrup, whipped cream, or fresh fruit.
