Ingredients

  • 1 cup brown sugar (packed)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips (optional)
  • 1 cup Nutella

Instructions

  1. Using a cookie scoop or spoon, scoop small dollops of Nutella (about 1 teaspoon each) onto a parchment-lined baking sheet. Freeze for 30 minutes to firm up.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then add the vanilla extract. Mix until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in chocolate chips if desired.
  6. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Take a tablespoon of cookie dough, flatten it in your palm, place a frozen dollop of Nutella in the center, and wrap the dough around it to form a ball, ensuring Nutella is completely enclosed.
  8. Arrange the stuffed cookie balls on the baking sheet, spacing about 2 inches apart.
  9. Bake for 10-12 minutes, until edges are lightly golden. Centers may look slightly underbaked.
  10. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
