Delicious Nutella stuffed cookies that are soft and chewy with a gooey Nutella center.

- 1 cup unsalted butter (softened)
- 1 cup granulated sugar
- 1 cup brown sugar (packed)
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chocolate chips (optional)
- 1 cup Nutella
Instructions
- Using a cookie scoop or spoon, scoop small dollops of Nutella (about 1 teaspoon each) onto a parchment-lined baking sheet. Freeze for 30 minutes to firm up.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then add the vanilla extract. Mix until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in chocolate chips if desired.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Take a tablespoon of cookie dough, flatten it in your palm, place a frozen dollop of Nutella in the center, and wrap the dough around it to form a ball, ensuring Nutella is completely enclosed.
- Arrange the stuffed cookie balls on the baking sheet, spacing about 2 inches apart.
- Bake for 10-12 minutes, until edges are lightly golden. Centers may look slightly underbaked.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Serve warm or at room temperature and enjoy the gooey Nutella center.
