A quick and delicious appetizer made with creamy goat cheese, sweet honey, tart cranberries, and crunchy pecans.

- 8 oz goat cheese, softened
- 1 tbsp honey
- 1 tbsp fresh parsley, finely chopped (optional)
- 1/2 cup dried cranberries, finely chopped
- 1/2 cup pecans, finely chopped
- Crackers or sliced baguette for serving
Instructions
- Start by dicing your cranberries and pecans finely. If you’re using parsley, mince that as well.
- In a medium bowl, combine the softened goat cheese and honey. Mix until smooth and creamy.
- Using a spoon, portion out the mixture into small balls, about one inch in diameter.
- On a shallow dish, mix the chopped cranberries, pecans, and parsley (if using). Roll each goat cheese ball in this mixture until coated.
- Place the cheese balls on a serving platter and chill in the refrigerator for at least 30 minutes before serving.
Notes
Can be prepped in advance and stored in the refrigerator. These bites are great for last-minute gatherings and are customizable with different nuts or dried fruits.
