Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- Cream together the butter and sugar until fluffy; add eggs, lemon zest, and juice.
- Gradually mix in dry ingredients alternating with buttermilk. Fold in poppy seeds.
- Pour into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick comes out clean. Cool before serving.
Notes
For a beautiful finish, dust with powdered sugar before serving. This recipe is also easily adaptable; you can add chocolate chips or swap in other citrus zests for variation.
