Description

Ingredients

  • 1/2 teaspoon baking soda

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1/2 cup buttermilk
  • 2 tablespoons poppy seeds
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream together the butter and sugar until fluffy; add eggs, lemon zest, and juice.
  4. Gradually mix in dry ingredients alternating with buttermilk. Fold in poppy seeds.
  5. Pour into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes or until a toothpick comes out clean. Cool before serving.

Notes

For a beautiful finish, dust with powdered sugar before serving. This recipe is also easily adaptable; you can add chocolate chips or swap in other citrus zests for variation.
