Description

Easy and impressive lemon cream pie bars with a buttery crust and creamy filling.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract (optional)
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix flour, melted butter, and sugar in a bowl until combined to form the crust.
  3. Press the crust mixture into the bottom of a greased 8×8-inch baking dish.
  4. Bake for 15 minutes or until lightly golden.
  5. Whisk together the eggs, lemon juice, lemon zest, vanilla extract (if using), and salt in another bowl.
  6. Pour the lemon filling over the baked crust.
  7. Bake for an additional 20-25 minutes, until set but slightly jiggles.
  8. Chill in the refrigerator for at least 3 hours before slicing.

Notes

For cleaner edges, let bars chill longer and use a sharp knife for slicing. Can be made ahead of time and stored in the fridge.
