Ingredients

- 3 to 4 pounds beef chuck roast
- 2 tablespoons gochujang
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 4 cloves garlic, minced
- 1 onion, sliced
- 2 carrots, chopped
- 2 cups beef broth
- Salt and pepper to taste
- Green onions, for garnish
Instructions
- Preheat oven to 325°F (163°C).
- Mix gochujang, soy sauce, sesame oil, garlic, salt, and pepper. Rub the mixture over the beef roast.
- Brown the roast in a skillet on all sides, about 3-4 minutes per side.
- In a Dutch oven, place onion and carrot at the bottom, then add the roast.
- Pour the beef broth over the roast. Cover and roast in the oven for 3-4 hours.
- Let rest before slicing and garnish with chopped green onions.
Notes
Serve with rice or mashed potatoes to soak up the delicious broth. Can adjust spice level for younger palates.
