Description

A flavorful Korean-style pot roast infused with the rich taste of gochujang, perfect for family gatherings and special occasions.


Ingredients

Scale
  • 3 to 4 pounds beef chuck roast
  • 2 tablespoons gochujang
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 onion, sliced
  • 2 carrots, chopped
  • 2 cups beef broth
  • Salt and pepper to taste
  • Green onions, for garnish

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Mix gochujang, soy sauce, sesame oil, garlic, salt, and pepper. Rub the mixture over the beef roast.
  3. Brown the roast in a skillet on all sides, about 3-4 minutes per side.
  4. In a Dutch oven, place onion and carrot at the bottom, then add the roast.
  5. Pour the beef broth over the roast. Cover and roast in the oven for 3-4 hours.
  6. Let rest before slicing and garnish with chopped green onions.

Notes

Serve with rice or mashed potatoes to soak up the delicious broth. Can adjust spice level for younger palates.
