Description

Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 large egg yolks
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup fresh key lime juice
  • 1 teaspoon lime zest
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • Lime slices for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine graham cracker crumbs, sugar, and melted butter to form the crust. Press the mixture into the bottom of a pie pan.
  3. Bake the crust for 8-10 minutes until golden. Remove from oven and let cool.
  4. Whisk together the egg yolks and sweetened condensed milk until smooth in a mixing bowl.
  5. Stir in the key lime juice and lime zest until well combined.
  6. Pour the filling into the cooled crust and bake for another 10-15 minutes. Remove from oven and let cool to room temperature, then refrigerate for at least 2 hours.
  7. Whip the heavy cream with powdered sugar until stiff peaks form. Spread or pipe the whipped cream over the top of the pie.
  8. Garnish with lime slices and serve chilled.

Notes

Use fresh key limes for a more intense flavor. Avoid overbaking the filling for a smooth texture.
