Instructions
- Place chicken breasts between two sheets of plastic wrap. Pound them to an even thickness of about 1/2 inch.
- Set up three shallow dishes. In the first, combine flour with salt, pepper, garlic powder, and onion powder. In the second, beat the eggs. In the third, mix breadcrumbs with grated Parmesan cheese.
- Dredge each chicken cutlet first in the seasoned flour, then in the beaten eggs, and finally coat well with the breadcrumb mixture.
- Heat about 1/4 inch of olive oil in a large skillet over medium heat until hot.
- Carefully add the coated chicken cutlets to the skillet. Cook for 4-5 minutes per side, until golden brown and cooked through. Cook in batches if necessary.
- Remove cooked chicken cutlets from the skillet and place them on a plate lined with paper towels to drain excess oil.
- Sprinkle the drained cutlets with fresh chopped basil.
