Ingredients

  • 1 cup graham cracker crumbs
  • 3 tablespoons melted butter
  • 2 tablespoons granulated sugar
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1 tablespoon cornstarch
  • 2 large egg yolks
  • Sugar for caramelizing on top

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Combine graham crackers, melted butter, and sugar; press into molds.
  3. Beat cream cheese, powdered sugar, and vanilla until smooth.
  4. Whip heavy cream to stiff peaks; fold into cream cheese mixture.
  5. Whisk together cornstarch and egg yolks over low heat until thickened, then stir into mixture.
  6. Spoon filling into molds; bake for 20-25 minutes until just set.
  7. Cool completely in the oven with the door ajar.
  8. Refrigerate for at least 4 hours; caramelize sugar before serving.

Notes

For best flavor, refrigerate overnight. Use a kitchen torch for caramelizing sugar; if unavailable, broil for 1-2 minutes, watching closely.
