Ingredients

- 4 medium carrots, julienned
- 1 tablespoon salt
- 3 tablespoons apple cider vinegar
- 2 tablespoons sugar
- 1 tablespoon sesame oil
- 1 teaspoon minced garlic
- 1 teaspoon ground black pepper
- 1–2 tablespoons sesame seeds
- 2 green onions, finely chopped (optional)
Instructions
- Peel and julienne the carrots.
- Salt the carrots and let sit for 10-15 minutes.
- Rinse and drain the carrots.
- Mix dressing ingredients until sugar is dissolved.
- Toss carrots with dressing.
- Garnish and let marinate for 10 minutes.
