Description

Delicious Honey Garlic Beef Sausage & Sweet Potatoes

Ingredients

Scale
  • 1 pound beef sausage (mild Italian, spicy chorizo, or hot Italian)
  • 2 large orange-fleshed sweet potatoes (Jewel or Beauregard varieties)
  • 1/4 cup honey
  • 4 cloves fresh garlic (minced)
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • Salt (to taste)
  • Freshly ground black pepper (to taste)
  • Red pepper flakes (optional, to taste)

Instructions

  1. Preheat the oven to 400°F (200°C). Peel the sweet potatoes and cut them into roughly 1-inch cubes.
  2. Transfer the diced sweet potatoes to a large baking sheet. Drizzle with olive oil, sprinkle with salt and black pepper, and toss until evenly coated. Spread them out in a single layer.
  3. Roast the sweet potatoes in the preheated oven for about 15-20 minutes.
  4. While the sweet potatoes are roasting, prepare the sausage by slicing it into 1-inch thick rounds or crumbling it if using ground sausage.
  5. After the sweet potatoes have roasted, add the sausage to the baking sheet, distributing it evenly. Stir gently to mix.
  6. Return the baking sheet to the oven and continue roasting for another 15-20 minutes, or until the sausage is cooked through and browned, and the sweet potatoes are tender.
  7. In a small bowl, whisk together the honey, minced garlic, soy sauce, and apple cider vinegar. Add red pepper flakes if desired.
  8. Once the sausage and sweet potatoes are cooked, pour the honey garlic sauce over them and toss gently to coat.
  9. For deeper caramelization, return the dish to the oven for an additional 5-7 minutes.
  10. Serve immediately, garnished with fresh chopped parsley or green onions if desired.
