Fast and easy Greek yogurt pizza crust that is high in protein and delivers a tender, chewy base without long rises.

- 300 g (1 1/4 cups) plain Greek yogurt
- 200 g (1 1/2 cups) all-purpose flour
- 30 g (1/4 cup) vital wheat gluten (optional)
- 1 tsp (4 g) baking powder
- 1/2 tsp (3 g) fine sea salt
- 1 tbsp (15 ml) olive oil
- 1 tsp (7 g) honey or sugar (optional)
- Toppings of your choice (150–200 g / 5–7 oz per pizza)
Instructions
- Combine the wet ingredients: In a large bowl, whisk Greek yogurt with olive oil and baking powder until smooth, about 30 seconds.
- Mix in dry ingredients: Add flour, vital wheat gluten, and fine sea salt. Stir until a shaggy dough forms, about 45–60 seconds.
- Knead and rest briefly: Turn dough onto a lightly floured surface and knead 6–8 times until smooth. Let rest on the counter for 10 minutes.
- Shape the crust: Divide the dough into two equal pieces or keep whole for one pizza. Roll out to 9–10 inches in thickness.
- Par-bake for structure: Preheat oven to 450°F (230°C) and par-bake the crust for 6 minutes.
- Top and finish baking: Add sauce and toppings, then bake for another 6–8 minutes until the crust is golden brown.
Notes
Avoid sogginess by not overloading with toppings. A pizza stone or cast-iron skillet can improve crispness.
