Description

A tender, healthy whole-wheat banana bread that is easy to make and packed with flavor.


Ingredients

  • 260 g (2 cups) whole-wheat flour
  • 40 g (⅓ cup) all-purpose flour
  • 200 g (1 cup) granulated sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp fine salt
  • 400 g (about 3 medium/large) very ripe bananas, mashed
  • 2 large eggs, room temperature
  • 80 ml (⅓ cup + 1 tbsp) neutral oil or melted unsalted butter
  • 60 ml (¼ cup) plain Greek yogurt or sour cream
  • 2 tsp pure vanilla extract
  • 90120 g (½–¾ cup) chopped walnuts or dark chocolate chips (optional)

Instructions

  1. Preheat the oven to 175°C (350°F) and prepare a 9×5-inch loaf pan.
  2. Whisk together the whole-wheat flour, all-purpose flour, granulated sugar, baking powder, baking soda, and salt in a medium bowl until blended.
  3. Mash the ripe bananas in a large bowl. Add eggs, oil or melted butter, Greek yogurt, and vanilla; whisk until combined.
  4. Fold the dry ingredients into the wet, mixing gently until no dry streaks remain.
  5. Fold in the walnuts or chocolate chips if using, then transfer the batter to the prepared loaf pan.
  6. Bake for 50–60 minutes, rotating halfway, until a toothpick comes out with a few moist crumbs.
  7. Cool in the pan for 10 minutes, then remove and cool on a wire rack before slicing.

Notes

Ensure the bananas are very ripe for the best flavor and moisture. Avoid overmixing the batter to keep the loaf tender.
