Description
A tender, healthy whole-wheat banana bread that is easy to make and packed with flavor.

- 260 g (2 cups) whole-wheat flour
- 40 g (⅓ cup) all-purpose flour
- 200 g (1 cup) granulated sugar
- 2 tsp baking powder
- ½ tsp baking soda
- 1 tsp fine salt
- 400 g (about 3 medium/large) very ripe bananas, mashed
- 2 large eggs, room temperature
- 80 ml (⅓ cup + 1 tbsp) neutral oil or melted unsalted butter
- 60 ml (¼ cup) plain Greek yogurt or sour cream
- 2 tsp pure vanilla extract
- 90–120 g (½–¾ cup) chopped walnuts or dark chocolate chips (optional)
Instructions
- Preheat the oven to 175°C (350°F) and prepare a 9×5-inch loaf pan.
- Whisk together the whole-wheat flour, all-purpose flour, granulated sugar, baking powder, baking soda, and salt in a medium bowl until blended.
- Mash the ripe bananas in a large bowl. Add eggs, oil or melted butter, Greek yogurt, and vanilla; whisk until combined.
- Fold the dry ingredients into the wet, mixing gently until no dry streaks remain.
- Fold in the walnuts or chocolate chips if using, then transfer the batter to the prepared loaf pan.
- Bake for 50–60 minutes, rotating halfway, until a toothpick comes out with a few moist crumbs.
- Cool in the pan for 10 minutes, then remove and cool on a wire rack before slicing.
Notes
Ensure the bananas are very ripe for the best flavor and moisture. Avoid overmixing the batter to keep the loaf tender.
