Description

A light and creamy chicken salad made with Greek yogurt, perfect for quick lunches and meal prep.


Ingredients

  • 2 to 3 cups cooked chicken, chopped or shredded
  • ½ to ¾ cup plain Greek yogurt (full fat or low fat)
  • 1 to 2 teaspoons Dijon mustard
  • a squeeze of lemon juice
  • chopped celery
  • red onion or green onion
  • salt and black pepper, to taste
  • Optional add-ins: grapes, chopped apples, walnuts, sliced almonds, dried cranberries, fresh dill, parsley
  • diced avocado (optional)

Instructions

  1. Start with cooked chicken. If cooking fresh, let it cool for a few minutes.
  2. In a medium bowl, stir together Greek yogurt, Dijon mustard, lemon juice, salt, and pepper.
  3. Add chicken, celery, and onion. Stir until everything is coated.
  4. Add your fun stuff if using it (grapes, nuts, herbs).
  5. Taste and adjust seasoning as needed.

Notes

Keep crunchy add-ins separate until ready to eat. Store in an airtight container and consume within 3-4 days.
