A light and creamy chicken salad made with Greek yogurt, perfect for quick lunches and meal prep.
Ingredients

- 2 to 3 cups cooked chicken, chopped or shredded
- ½ to ¾ cup plain Greek yogurt (full fat or low fat)
- 1 to 2 teaspoons Dijon mustard
- a squeeze of lemon juice
- chopped celery
- red onion or green onion
- salt and black pepper, to taste
- Optional add-ins: grapes, chopped apples, walnuts, sliced almonds, dried cranberries, fresh dill, parsley
- diced avocado (optional)
Instructions
- Start with cooked chicken. If cooking fresh, let it cool for a few minutes.
- In a medium bowl, stir together Greek yogurt, Dijon mustard, lemon juice, salt, and pepper.
- Add chicken, celery, and onion. Stir until everything is coated.
- Add your fun stuff if using it (grapes, nuts, herbs).
- Taste and adjust seasoning as needed.
Notes
Keep crunchy add-ins separate until ready to eat. Store in an airtight container and consume within 3-4 days.
