  • 680 g (1.5 lb) boneless skinless chicken thighs
  • 56 g (4 tbsp) unsalted butter
  • 60 ml (4 tbsp) honey
  • 120 ml (1/2 cup) BBQ sauce
  • 3 garlic cloves, minced
  • 15 ml (1 tbsp) apple cider vinegar
  • 8 small corn or flour tortillas (6-inch)
  • 200 g (about 2 cups) shredded green cabbage
  • 60 g (about 1/2 cup) shredded carrot
  • 30 ml (2 tbsp) mayonnaise or Greek yogurt
  • 1 lime, juiced (about 30 ml / 2 tbsp)
  • 15 g (1/4 cup) chopped cilantro
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 15 ml (1 tbsp) neutral oil (canola or vegetable)

Instructions

  1. Prep the chicken and slaw: Trim excess fat and pat the chicken thighs dry; season with 1 tsp kosher salt and 1/2 tsp black pepper. Toss the cabbage and carrot with lime juice, mayonnaise or Greek yogurt, and a pinch of salt; set slaw in the fridge to chill for about 5–10 minutes.
  2. Mix the garlic-butter-honey BBQ glaze: In a small bowl, combine melted butter, honey, BBQ sauce, minced garlic, and apple cider vinegar. Whisk until smooth and set near the stove.
  3. Heat the pan and sear the chicken: Heat neutral oil in a heavy skillet over medium-high until shimmering. Add chicken without crowding and sear 3–4 minutes per side until golden crust forms.
  4. Glaze and finish the chicken: Reduce heat to medium-low, pour the glaze over the chicken, and cook until the internal temperature reaches 74°C (165°F). Remove chicken, rest for 5 minutes, then slice into strips.
  5. Warm tortillas and assemble: Warm tortillas in a dry skillet or oven, divide sliced chicken across tortillas, top with slaw and cilantro, and finish with lime juice. Serve immediately.

Notes

Chicken can be prepared up to 24 hours in advance. For gluten-free option, use corn tortillas and verify BBQ sauce is gluten-free.
