Ingredients

  • 3 very ripe bananas, mashed
  • 2 eggs
  • 1 cup plain Greek yogurt (or skyr)
  • 1/3 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 1/2 cups oat flour
  • 1/2 cup protein powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • Optional: 1/2 cup chopped walnuts or pecans
  • Optional: 1/3 cup mini chocolate chips

Instructions

  1. Heat your oven to 350 F. Grease a loaf pan, or line it with parchment paper.
  2. Mash the bananas in a big bowl until mostly smooth. Some little chunks are totally fine.
  3. Whisk in eggs, Greek yogurt, maple syrup, and vanilla.
  4. Sprinkle in oat flour, protein powder, baking soda, cinnamon, and salt. Stir just until you don’t see dry pockets.
  5. Fold in nuts or chocolate chips if you’re using them.
  6. Pour into the pan and bake for 45 to 55 minutes. A toothpick should come out mostly clean, with a few moist crumbs.
  7. Cool in the pan for 10 minutes, then move to a rack to cool more before slicing.

Notes

For extra moisture, add ingredients like mashed avocado or additional Greek yogurt.
