Description

A delightful combination of crispy, savory onion fritters that are perfect as a snack, side dish, or appetizer.


Ingredients

  • 2 large onions, thinly sliced
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup buttermilk
  • Oil for frying (canola or vegetable)
  • Optional: Chopped chives or parsley for garnish

Instructions

  1. Slice the onions thinly and place them in a colander. Sprinkle with salt and let sit for about 15 minutes to draw out moisture.
  2. In a large bowl, combine flour, cornmeal, baking powder, garlic powder, salt, and pepper. Mix well.
  3. Stir in the buttermilk until the batter is thick but pourable.
  4. Add the drained onions and stir until they are coated in the batter.
  5. Heat oil in a frying pan to about 350°F.
  6. Drop spoonfuls of the batter-onion mixture into the hot oil, frying until golden brown on both sides (about 3-4 minutes per side).
  7. Place fritters on paper towels to drain excess oil.
  8. Garnish with chives or parsley before serving.

Notes

Don’t skip salting the onions to remove excess moisture. Leftovers can be reheated in the oven to regain their crispiness.
