- 2 large onions, thinly sliced
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1 teaspoon baking powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup buttermilk
- Oil for frying (canola or vegetable)
- Optional: Chopped chives or parsley for garnish
Instructions
- Slice the onions thinly and place them in a colander. Sprinkle with salt and let sit for about 15 minutes to draw out moisture.
- In a large bowl, combine flour, cornmeal, baking powder, garlic powder, salt, and pepper. Mix well.
- Stir in the buttermilk until the batter is thick but pourable.
- Add the drained onions and stir until they are coated in the batter.
- Heat oil in a frying pan to about 350°F.
- Drop spoonfuls of the batter-onion mixture into the hot oil, frying until golden brown on both sides (about 3-4 minutes per side).
- Place fritters on paper towels to drain excess oil.
- Garnish with chives or parsley before serving.
Notes
Don’t skip salting the onions to remove excess moisture. Leftovers can be reheated in the oven to regain their crispiness.
