Ingredients

- 400 g (14 oz) pasta
- 2 tablespoons olive oil
- 500 g (1 lb) boneless, skinless chicken breasts, cut into bite-sized pieces
- 4 cloves garlic, minced
- 240 ml (1 cup) heavy cream
- 100 g (1 cup) grated parmesan cheese
- Salt and pepper, to taste
- Fresh parsley, chopped (optional)
Instructions
- Cook the pasta according to package directions until al dente. Drain and set aside, reserving about 120 ml (½ cup) of pasta water.
- Sauté the chicken in a large skillet over medium heat with olive oil. Season with salt and pepper, and cook for about 5–7 minutes until browned and cooked through.
- Cook the garlic in the same skillet until fragrant, about 30 seconds.
- Make the sauce by pouring in the heavy cream and simmering. Add the parmesan cheese and stir until melted and smooth.
- Combine the cooked chicken and drained pasta with the sauce, tossing to combine. Adjust sauce thickness with reserved pasta water as needed.
- Serve immediately, garnished with chopped parsley if desired.
Notes
Avoid overcooking the chicken to prevent dryness. You can prep ingredients a day in advance for convenience.
