Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 large carrots, sliced
  • 2 stalks celery, sliced
  • 1 pound boneless, skinless chicken breasts
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 2 cups egg noodles
  • 1 cup heavy cream
  • Fresh parsley, for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, minced garlic, sliced carrots, and sliced celery. Sauté for about 5 minutes until the vegetables are tender.
  3. Place the boneless chicken breasts in the pot and pour in the chicken broth.
  4. Add the dried thyme, dried parsley, salt, and pepper. Bring to a boil, then reduce heat to a simmer.
  5. Cover the pot and let it simmer for about 20 minutes, or until the chicken is cooked through.
  6. Carefully take the chicken out of the pot and place it on a cutting board. Allow it to cool slightly.
  7. Once cool enough to handle, shred the chicken into bite-sized pieces using two forks.
  8. Add the egg noodles to the pot and cook according to the package instructions, usually around 6-8 minutes.
  9. Stir in the heavy cream, then return the shredded chicken to the pot.
  10. Allow the soup to heat for an additional 5 minutes, stirring occasionally.
  11. Taste and adjust the seasoning with more salt and pepper if needed.
  12. Serve hot, garnished with fresh parsley, if desired.
