- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 large carrots, sliced
- 2 stalks celery, sliced
- 1 pound boneless, skinless chicken breasts
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
- 2 cups egg noodles
- 1 cup heavy cream
- Fresh parsley, for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion, minced garlic, sliced carrots, and sliced celery. Sauté for about 5 minutes until the vegetables are tender.
- Place the boneless chicken breasts in the pot and pour in the chicken broth.
- Add the dried thyme, dried parsley, salt, and pepper. Bring to a boil, then reduce heat to a simmer.
- Cover the pot and let it simmer for about 20 minutes, or until the chicken is cooked through.
- Carefully take the chicken out of the pot and place it on a cutting board. Allow it to cool slightly.
- Once cool enough to handle, shred the chicken into bite-sized pieces using two forks.
- Add the egg noodles to the pot and cook according to the package instructions, usually around 6-8 minutes.
- Stir in the heavy cream, then return the shredded chicken to the pot.
- Allow the soup to heat for an additional 5 minutes, stirring occasionally.
- Taste and adjust the seasoning with more salt and pepper if needed.
- Serve hot, garnished with fresh parsley, if desired.
