Description
An elegant weeknight entrée that combines sweet-tart cranberries with creamy brie and a crunchy breadcrumb coating.

- 4 boneless chicken breasts
- 4 slices of brie cheese
- 4 tablespoons cranberry sauce
- 1 cup breadcrumbs
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- Fresh herbs (thyme or rosemary) for seasoning
Instructions
- Preheat the oven to 375°F (190°C) and pat the chicken breasts dry.
- Cut a horizontal pocket into each chicken breast without cutting all the way through.
- Place a slice of brie and a tablespoon of cranberry sauce inside each pocket.
- Season the outside of the chicken breasts with salt, pepper, and herbs.
- Mix breadcrumbs with olive oil and press onto each breast to coat.
- Bake for 25–30 minutes until the internal temperature reaches 165°F (74°C).
- Let rest for 5 minutes before serving.
Notes
For a crispier crust, use panko breadcrumbs. Allow the chicken to rest before slicing to retain moisture.
