Cranberry Brie Stuffed Chicken

Description

An elegant weeknight entrée that combines sweet-tart cranberries with creamy brie and a crunchy breadcrumb coating.


Ingredients

Scale
  • 4 boneless chicken breasts
  • 4 slices of brie cheese
  • 4 tablespoons cranberry sauce
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • Fresh herbs (thyme or rosemary) for seasoning

Instructions

  1. Preheat the oven to 375°F (190°C) and pat the chicken breasts dry.
  2. Cut a horizontal pocket into each chicken breast without cutting all the way through.
  3. Place a slice of brie and a tablespoon of cranberry sauce inside each pocket.
  4. Season the outside of the chicken breasts with salt, pepper, and herbs.
  5. Mix breadcrumbs with olive oil and press onto each breast to coat.
  6. Bake for 25–30 minutes until the internal temperature reaches 165°F (74°C).
  7. Let rest for 5 minutes before serving.

Notes

For a crispier crust, use panko breadcrumbs. Allow the chicken to rest before slicing to retain moisture.
