Description

A lighter, high-protein twist on classic chicken parmesan, featuring creamy cottage cheese for added flavor and protein.


Ingredients

  • 1 tsp (6 g) kosher salt
  • 1/2 tsp (1 g) black pepper
  • 60 g (½ cup) all-purpose flour
  • 2 large eggs, whisked with 15 ml (1 tbsp) water
  • 120 g (1 1/4 cups) panko breadcrumbs
  • 1 tsp dried Italian seasoning
  • 30 g (1/4 cup) grated Parmesan
  • 30 ml (2 tbsp) olive oil
  • 225 g (1 cup) cottage cheese
  • 60 g (2/3 cup) grated Parmesan
  • 1 large egg yolk
  • 1/4 tsp (0.5 g) salt
  • Generous grind of black pepper
  • 480 ml (2 cups) marinara sauce
  • 50 g (1/2 cup) shredded part-skim mozzarella
  • Fresh basil leaves and lemon zest (optional)

Instructions

  1. Prepare the chicken: Pound the chicken breasts to an even thickness and season with salt and pepper.
  2. Set up the breading station: Prepare bowls for flour, egg wash, and breadcrumbs.
  3. Pan-sear the chicken: Heat olive oil and sear chicken until golden brown.
  4. Make the cottage-cheese topping: Mix cottage cheese, grated Parmesan, egg yolk, salt, and pepper.
  5. Assemble and bake: Top the seared chicken with marinara sauce and the cottage cheese mixture, then bake.
  6. Finish and rest: Broil if desired, then let rest before serving.

Notes

Use an instant-read thermometer to ensure chicken reaches 74°C (165°F). For gluten-free, substitute gluten-free flour and panko.
