Chickpea Salad with Lemon & Herbs

Description

A refreshing chickpea salad featuring lemon, olive oil, and crunchy vegetables, ideal for busy nights and packed lunches.


Ingredients

  • 2 x 400 g cans / 2 x 15 oz cans chickpeas, drained and rinsed
  • 60 ml / 1/4 cup lemon juice (about 1 large lemon)
  • 15 ml / 1 tbsp red wine vinegar
  • 60 ml / 1/4 cup extra-virgin olive oil
  • 40 g / 1/4 cup red onion, finely diced
  • 120 g / 1 cup celery, thinly sliced
  • 150 g / 1 medium cucumber, diced
  • 150 g / 5 oz cherry tomatoes, halved
  • 15 g / 1/2 cup fresh parsley, chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: 80 g / 3 oz feta, crumbled
  • Optional: 60 g / 1/3 cup olives
  • Optional: 1/2 tsp ground cumin

Instructions

  1. Drain and prep the chickpeas: Drain the canned chickpeas and rinse under cold water for 30–60 seconds, then pat dry.
  2. Lightly mash for creaminess: Reserve about 240 g (1 cup) of chickpeas whole and roughly crush 120 g (1/2 cup) with a fork or potato masher.
  3. Chop the vegetables: Finely dice the cucumber, thinly slice the celery, halve the cherry tomatoes, and dice the red onion, then combine with the chickpeas in a large bowl.
  4. Make the dressing: Whisk together olive oil, lemon juice, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper until slightly emulsified.
  5. Toss the salad: Pour the dressing over the chickpea mixture and toss gently until evenly coated, adding chopped parsley and feta if using.
  6. Rest and adjust seasoning: Let the salad rest for 10–20 minutes to marry the flavors. Taste and adjust seasoning as needed.
  7. Serve or store: Serve at room temperature or chilled, and consume within 2–3 days.

Notes

For extra creaminess without dairy, fold in tahini into the dressing. Use low-sodium canned chickpeas for a healthier version.
