Description

A refreshing salad combining chickpeas and avocado, perfect for lunch or a light dinner.


Ingredients

  • 1 small red onion, finely chopped
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Combine the chickpeas, diced avocado, red onion, bell pepper, cherry tomatoes, and cilantro in a large mixing bowl.
  2. Squeeze the lime juice over the salad and season with salt and pepper.
