Ingredients

  • 1 medium head of cabbage, chopped
  • 1 pound of chicken sausage, sliced
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 cup of rice (preferably long grain)
  • 1 can of diced tomatoes (15 oz, drained)
  • 4 cups of chicken broth
  • 2 tablespoons of Cajun seasoning
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a large pot or Dutch oven, heat a bit of oil over medium heat. Add the sliced chicken sausage and cook for about 5-7 minutes, until browned.
  2. Once the sausage is browned, add the diced onion, bell pepper, and minced garlic. Sauté for an additional 3-4 minutes until everything is soft and aromatic.
  3. Stir in the chopped cabbage and cook for about 5 minutes until it begins to wilt.
  4. Add the rice, diced tomatoes, chicken broth, and Cajun seasoning. Mix everything together.
  5. Increase the heat until bubbling, then reduce to low, cover, and let simmer for about 20-25 minutes, or until the rice is tender.
  6. Adjust seasoning with salt and pepper. Garnish with chopped green onions before serving.
