- 1 medium head of cabbage, chopped
- 1 pound of chicken sausage, sliced
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 cup of rice (preferably long grain)
- 1 can of diced tomatoes (15 oz, drained)
- 4 cups of chicken broth
- 2 tablespoons of Cajun seasoning
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a large pot or Dutch oven, heat a bit of oil over medium heat. Add the sliced chicken sausage and cook for about 5-7 minutes, until browned.
- Once the sausage is browned, add the diced onion, bell pepper, and minced garlic. Sauté for an additional 3-4 minutes until everything is soft and aromatic.
- Stir in the chopped cabbage and cook for about 5 minutes until it begins to wilt.
- Add the rice, diced tomatoes, chicken broth, and Cajun seasoning. Mix everything together.
- Increase the heat until bubbling, then reduce to low, cover, and let simmer for about 20-25 minutes, or until the rice is tender.
- Adjust seasoning with salt and pepper. Garnish with chopped green onions before serving.
