Description

Unbelievable Blueberry French Toast Casserole – The Ultimate Easy Breakfast Recipe

Ingredients

Scale
  • 8 slices of thick-cut bread (such as challah, brioche, or French bread)
  • 1 ½ cups fresh blueberries (or frozen if fresh is not available)
  • 6 large eggs
  • 2 cups whole milk
  • ½ cup heavy cream
  • ½ cup maple syrup
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 2 tablespoons unsalted butter (melted, for greasing)
  • Powdered sugar (for dusting, optional)
  • For the topping:
  • 1/3 cup brown sugar
  • 2 tablespoons cold butter (cut into small pieces)
  • 1 tablespoon all-purpose flour

Instructions

  1. Start by slicing your bread into cubes. Cut them into 1-inch cubes.
  2. In a large mixing bowl, whisk together the eggs, milk, heavy cream, maple syrup, cinnamon, vanilla extract, and a pinch of salt until well combined.
  3. Butter your 9×13-inch baking dish with the melted butter. Place the bread cubes into the baking dish.
  4. Gently pour the custard mixture over the bread cubes, ensuring all pieces are coated.
  5. Add the blueberries over the top of the bread mixture, gently pressing them in.
  6. Cover the baking dish with plastic wrap and refrigerate overnight (or for at least 4 hours).
  7. In a small bowl, combine the brown sugar, cold butter, and flour for the topping. Mix until it resembles coarse crumbs.
  8. Preheat your oven to 350°F (175°C). Remove the casserole from the fridge and let it sit for 10 minutes.
  9. Bake for 45-50 minutes, or until golden brown and a knife inserted in the center comes out clean.
  10. Let it cool for a few minutes, dust with powdered sugar if desired, and serve with extra maple syrup.

Notes

  • This dish can be prepared the night before for convenience.
  • Feel free to use frozen blueberries if fresh ones are not available.
  • Adjust the sweetness by adding more or less maple syrup.
