- 320 g (2 3/4 cups) all-purpose flour
- 7 g (2 tsp) instant yeast
- 6 g (1 tsp) kosher salt
- 200 ml (3/4 cup + 1 tbsp) warm water
- 15 ml (1 tbsp) olive oil
- 340 g (12 oz) skirt or flank steak
- 3 g (1/2 tsp) kosher salt
- 1 g (1/4 tsp) black pepper
- 150 g (1 1/2 cups) shredded mozzarella
- 100 g (3.5 oz) blue cheese
- 1 small red onion (100 g)
- 5 ml (1 tsp) olive oil for brushing
- 30 ml (2 tbsp) balsamic reduction
- 10 ml (2 tsp) honey
- Optional: fresh arugula for garnish
Instructions
- Make or prepare the dough and preheat the oven. Combine flour, yeast, and salt in a bowl, then add warm water and olive oil, mixing until a shaggy dough forms. Knead and rest while preheating the oven to 260°C (500°F).
- Season and sear the steak. Pat the steak dry, season, and sear in a hot cast-iron skillet for 2 minutes per side. Rest the steak after cooking.
- Shape the dough and par-bake the crust. Stretch the rested dough into a round, transfer it to a preheated stone, and par-bake for 4–5 minutes.
- Assemble the pizza. Brush the crust with olive oil, scatter mozzarella, layer with steak, crumble blue cheese, and add red onion slices.
- Bake until golden and bubbly. Return to the oven and bake for 6–8 minutes, rotating halfway through for even browning.
- Rest, garnish, and serve. Let the pizza rest for 2 minutes, garnish with arugula, slice, and enjoy hot.
Notes
Avoid soggy crust by not overloading toppings. Par-bake the dough to set it before adding toppings.
