- 1 cup chocolate cookies, crushed
- 1/4 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy cream
- 1 cup cherry pie filling
- 2 oz dark chocolate, shavings for garnish
- Cherries for topping
Instructions
- Preheat oven to 325°F (160°C).
- Mix crushed chocolate cookies and melted butter. Press into springform pan.
- Beat cream cheese, powdered sugar, and vanilla until smooth.
- Whip heavy cream until stiff peaks form. Fold into cream cheese mixture.
- Pour over crust. Bake for 50-60 minutes until set.
- Cool, top with cherry pie filling, dark chocolate shavings, and fresh cherries. Chill before serving.
Notes
For a lighter version, substitute heavy cream with Greek yogurt; for a dairy-free option, use vegan cream cheese and coconut cream.
