Description
Banana Mini Morsel Bars are absolutely scrumptious. These bar-type cookies have all the delicious flavor and texture of banana bread with chocolate chips.
Ingredients
2 cups (240 g) unbleached all-purpose flour
2 tsp (8 g) baking powder
1/2 tsp (3 g) sea salt
3/4 cup (170 g) unsalted butter, softened to 67Β°F (19Β°C)
2/3 cup (135 g) granulated sugar + 2/3 cup (145 g) packed light brown sugar
1 tsp vanilla extract (real, not imitation
3 medium ripe bananas, mashed (12 oz / 340 g peeled, about 1.5 cups)
1 large egg, room temperature
2 cups (340 g / 12 oz) semi-sweet mini chocolate morsels
2 tbsp powdered sugar for finishing
Instructions
- Mash bananas on a dinner plate with a fork until you see no chunks larger than a pea. Set aside.
- Whisk dry ingredients: flour, baking powder, and salt in a separate bowl. Sifting the baking powder with the flour distributes leavening evenly β a step I skipped for years and regretted.
- Grease the jelly roll pan with butter or line with parchment leaving a 2-inch overhang.
- Cream the wet ingredients: butter, both sugars, vanilla, egg, and mashed bananas. Beat for 2 minutes on medium until uniform and pale tan. The mixture will look slightly curdled β normal, the banana water is separating from the fat.
- Fold in the dry mixture and morsels by hand with a rubber spatula. Stop the second the flour streaks vanish. Overmixing is what creates dense, gummy bars.
- Spread evenly with an offset spatula. Aim for a uniform 1/2-inch depth corner to corner.
- Bake at 350Β°F (175Β°C) for 28-42 minutes. Start checking at 28 minutes. The center should spring back lightly and a toothpick should come out with a few moist crumbs β not wet batter.
- Cool completely on a wire rack, at least 45 minutes, before cutting. Warm bars tear.
- Dust with powdered sugar through a fine-mesh sieve right before serving.
Notes
Store leftovers in an airtight container for up to 4 days.
Can be frozen for up to 3 months.
Reheat gently on stovetop for best results.
