Description

Indulge in these delicious Baked Chicken Burritos filled with shredded chicken, rice, black beans, and topped with a creamy green chile sauce.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1/2 cup green chile sauce
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1/2 cup sour cream
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large flour tortillas
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large mixing bowl, combine chicken, rice, beans, corn, cheese, sour cream, green chile sauce, cumin, salt, and pepper.
  3. Fill and roll tortillas, placing seam side down in a greased baking dish.
  4. Drizzle additional green chile sauce and cheese on top.
  5. Bake for 20-25 minutes until heated through and cheese melts.
  6. Serve hot!

Notes

For a lighter version, substitute Greek yogurt for sour cream. To make it gluten-free, use corn tortillas.
