Indulge in these delicious Baked Chicken Burritos filled with shredded chicken, rice, black beans, and topped with a creamy green chile sauce.
Ingredients

- 2 cups cooked shredded chicken
- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1/2 cup green chile sauce
- 1 tsp cumin
- Salt and pepper to taste
- 1/2 cup sour cream
- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 large flour tortillas
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a large mixing bowl, combine chicken, rice, beans, corn, cheese, sour cream, green chile sauce, cumin, salt, and pepper.
- Fill and roll tortillas, placing seam side down in a greased baking dish.
- Drizzle additional green chile sauce and cheese on top.
- Bake for 20-25 minutes until heated through and cheese melts.
- Serve hot!
Notes
For a lighter version, substitute Greek yogurt for sour cream. To make it gluten-free, use corn tortillas.
