Ingredients

- 1 cup brown or green lentils
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 4 cups broth or water
- Salt and pepper to taste
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 pinch chili flakes (optional)
- Big handful of spinach or kale
- 1 lemon, for squeezing
Instructions
- Warm olive oil in a pot, then cook onion and carrots until they soften.
- Add garlic and spices and stir for about 30 seconds so everything smells amazing.
- Pour in tomatoes, lentils, and broth. Bring it to a gentle simmer.
- Let it cook until lentils are tender, usually 25 to 35 minutes depending on the lentil.
- Stir in spinach to wilt, then squeeze in lemon. Taste and adjust salt and pepper.
Notes
For best flavor, add salt in layers and allow the soup to simmer gently.
