Description

Ingredients

  • 2 medium zucchinis
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 large eggs
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • Cooking spray or olive oil for baking

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry the zucchinis, then slice them into fry-like shapes, about ¼ inch thick.
  3. In one bowl, whisk the eggs. In another bowl, mix breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  4. Dip each zucchini slice in the egg mixture, then in the breadcrumb mix, ensuring they are well-coated.
  5. Line a baking sheet with parchment paper and arrange the fries in a single layer. Spray with cooking spray or drizzle with olive oil.
  6. Bake for 20-25 minutes, flipping halfway through, until golden brown.
  7. Let them cool for a minute before serving. Enjoy with your favorite dipping sauce!
