Zucchini Feta Fritters are crispy, savory bites packed with flavor. They make a great appetizer or side dish.

- 2 medium zucchinis (about 2 cups grated)
- 1/2 teaspoon salt (for draining zucchini)
- 1/4 cup all-purpose flour (or gluten-free flour)
- 1/2 cup feta cheese (crumbled)
- 2 large eggs
- 1/4 cup green onions (finely chopped)
- 1/4 cup fresh parsley (chopped, optional)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- Olive oil (for frying)
Instructions
- Grate the zucchinis using a box grater or food processor.
- Place the grated zucchini in a clean kitchen towel or cheesecloth. Sprinkle with salt and let it sit for about 10 minutes. Then, twist and squeeze to remove excess moisture.
- In a large bowl, combine the drained zucchini, flour, crumbled feta cheese, eggs, green onions, parsley, garlic powder, and black pepper. Mix until well combined.
- In a large skillet, heat about 2 tablespoons of olive oil over medium heat.
- Using a spoon or your hands, scoop about 2 tablespoons of the mixture and shape it into a patty. Place it in the hot skillet. Repeat with the remaining mixture, ensuring not to overcrowd the pan.
- Cook the fritters for about 3–4 minutes on each side, or until they are golden brown and crispy. Add more oil as needed for frying.
- Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil.
- Serve warm, garnished with extra feta or fresh herbs if desired. They can be enjoyed on their own or with a yogurt dip!
Notes
- Adjust seasoning to taste.
- For a gluten-free option, use gluten-free flour.
- These fritters can be stored in the fridge for a few days.
