Description

Zucchini Feta Fritters are crispy, savory bites packed with flavor. They make a great appetizer or side dish.


Ingredients

  • 2 medium zucchinis (about 2 cups grated)
  • 1/2 teaspoon salt (for draining zucchini)
  • 1/4 cup all-purpose flour (or gluten-free flour)
  • 1/2 cup feta cheese (crumbled)
  • 2 large eggs
  • 1/4 cup green onions (finely chopped)
  • 1/4 cup fresh parsley (chopped, optional)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Olive oil (for frying)

Instructions

  1. Grate the zucchinis using a box grater or food processor.
  2. Place the grated zucchini in a clean kitchen towel or cheesecloth. Sprinkle with salt and let it sit for about 10 minutes. Then, twist and squeeze to remove excess moisture.
  3. In a large bowl, combine the drained zucchini, flour, crumbled feta cheese, eggs, green onions, parsley, garlic powder, and black pepper. Mix until well combined.
  4. In a large skillet, heat about 2 tablespoons of olive oil over medium heat.
  5. Using a spoon or your hands, scoop about 2 tablespoons of the mixture and shape it into a patty. Place it in the hot skillet. Repeat with the remaining mixture, ensuring not to overcrowd the pan.
  6. Cook the fritters for about 3–4 minutes on each side, or until they are golden brown and crispy. Add more oil as needed for frying.
  7. Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil.
  8. Serve warm, garnished with extra feta or fresh herbs if desired. They can be enjoyed on their own or with a yogurt dip!
