Description
Delicious Wonton Noodle Soup with Mushrooms to Cozy Up Your Meal
Ingredients
Scale
- 8 cups chicken broth
- 1 tablespoon low-sodium soy sauce
- 1 teaspoon chicken bouillon
- 1 teaspoon salt
- 1 teaspoon white pepper
- 14 ounces wonton noodles or egg noodles
- 25–30 wontons
- 1 ½ cups sliced mushrooms
- 1 small bunch bok choy
- 2 green onions
- chili oil or sesame oil (optional)
Instructions
- Prepare the Broth: In a large pot, pour in the chicken broth, adding soy sauce, chicken bouillon, salt, and white pepper. Stir well, then bring to a gentle simmer over medium heat.
- Cook the Mushrooms: Add the sliced mushrooms to the simmering broth. Let them cook for 5–6 minutes, stirring occasionally until they become tender and slightly golden.
- Boil the Noodles: In a separate pot, bring water to a boil. Add the wonton or egg noodles and cook for 45 seconds to 1 minute, just until tender. Drain and set aside.
- Blanch the Bok Choy: Using the same pot of boiling water, add bok choy and blanch for 30–45 seconds until it turns bright green and tender-crisp. Drain and set aside.
- Cook the Wontons: Gently add the wontons into the simmering broth with mushrooms. Cook for 5 minutes, or until they float to the surface and are fully cooked through.
- Assemble the Soup: Divide the cooked noodles and bok choy among serving bowls. Ladle the hot broth, along with mushrooms and wontons, over the top.
- Garnish: Sprinkle with chopped green onions and drizzle with chili oil or sesame oil, if desired. Serve immediately while hot for the best experience!
