Ingredients

  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon chicken bouillon
  • 1 teaspoon salt
  • 1 teaspoon white pepper
  • 14 ounces wonton noodles or egg noodles
  • 2530 wontons
  • 1 ½ cups sliced mushrooms
  • 1 small bunch bok choy
  • 2 green onions
  • chili oil or sesame oil (optional)

Instructions

  1. Prepare the Broth: In a large pot, pour in the chicken broth, adding soy sauce, chicken bouillon, salt, and white pepper. Stir well, then bring to a gentle simmer over medium heat.
  2. Cook the Mushrooms: Add the sliced mushrooms to the simmering broth. Let them cook for 5–6 minutes, stirring occasionally until they become tender and slightly golden.
  3. Boil the Noodles: In a separate pot, bring water to a boil. Add the wonton or egg noodles and cook for 45 seconds to 1 minute, just until tender. Drain and set aside.
  4. Blanch the Bok Choy: Using the same pot of boiling water, add bok choy and blanch for 30–45 seconds until it turns bright green and tender-crisp. Drain and set aside.
  5. Cook the Wontons: Gently add the wontons into the simmering broth with mushrooms. Cook for 5 minutes, or until they float to the surface and are fully cooked through.
  6. Assemble the Soup: Divide the cooked noodles and bok choy among serving bowls. Ladle the hot broth, along with mushrooms and wontons, over the top.
  7. Garnish: Sprinkle with chopped green onions and drizzle with chili oil or sesame oil, if desired. Serve immediately while hot for the best experience!
